Lamb skewers on the barbecue

 Ingredients for your lamb pita:

 

  • 6 lamb skewers
  • 1 onion, 1 tomato and 1 cucumber diced
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 4 pita breads
  • 1/2 cup Greek tzatziki
  • Juice of 1 lemon
  • 1/4 cup chopped fresh spinach

Directions

 

  1. Find your BBQing spot with a view, assembly your STOV BBQ and light it. Wait a few minutes until your STOV BBQ is nice and hot. 
  2. Place the lamb skewers on the barbie and cook for 5-6 minutes on each side, or until they're cooked to your liking. 
  3. While the lamb skewers are cooking, toast the pita breads on the barbie for 1-2 minutes on each side. If you like, you can add a cut lemon to be roasted on the bbq as well. This changes the taste of the lemon and will add some extra taste to your pita. 
  4. In a small bowl, mix together the the tomatoes, onion and cucumber, lemon juice, chopped dill mint and spinach.
  5. To assemble the pitas, open up the toasted pita breads and add in a few chunks of the lamb skewers and top with a dollop of the tzatziki sauce.
  6. Add your mix of veggies and herbs on top, add some roasted lemon juice and enjoy!
