Spring is on the way, the long weekend is just around the corner and you wonder what to cook on your BBQ? Not again the same sausages?
So how about this match made in heaven: Salmon and pineapple skewers. They are smoky, sweet, and just a little spicy.

What ingredients you’ll need:
- A pineapple (or just some pre-cut cubes)
- 500gram of salmon (cut into cubes)
- Extra virgin olive oil
- Sweet chilli sauce
- 2x cloves of garlic (finely chopped or minced)
- Freshly grated ginger
- Toasted sesame oil
- Chili flakes
- Sesame seeds
- Green spring onions and lime wedges for serving
Directions for cooking:
- Fire up the STOV and pre-heat for about 2-4 minutes while you skewer the salmon and the pineapple chunks and place them on a larger plate.
- Combine the olive oil, chilli sauce, garlic, ginger, chilli flakes, and sesame oil and add a little salt to it. Give it a whisk to combine and drizzle over the skewers
- Put your skewers on the BBQ and grill for about 10 minutes until the salmon has cooked through. While cooking, add the remaining sauce on top of your skewers and try to flip only ones (the double spike of the STOV skewers should help so that your food does not fall off!). If your salmon sticks and flakes, use some oil to avoid sticking.
- Take the skewers off the STOV BBQ and finish up with the sesame seeds, and green onions and serve with lime wedges and a sprinkle of lime juice.
