SALMON AND PINEAPPLE SKEWERS RECIPE ON THE STOV BBQ

SALMON AND PINEAPPLE SKEWERS RECIPE ON THE STOV BBQ

Spring is on the way, the long weekend is just around the corner and you wonder what to cook on your BBQ? Not again the same sausages?

So how about this match made in heaven: Salmon and pineapple skewers. They are smoky, sweet, and just a little spicy.

Read on how to make them below.

Salmon and Pineapple on the stov skewers ready for grilling

What ingredients you’ll need:

  • A pineapple (or just some pre-cut cubes)
  • 500gram of salmon (cut into cubes)
  • Extra virgin olive oil
  • Sweet chilli sauce
  • 2x cloves of garlic (finely chopped or minced)
  • Freshly grated ginger
  • Toasted sesame oil
  • Chili flakes
  • Sesame seeds
  • Green spring onions and lime wedges for serving

Directions for cooking:

  1. Fire up the STOV and pre-heat for about 2-4 minutes while you skewer the salmon and the pineapple chunks and place them on a larger plate.
  2. Combine the olive oil, chilli sauce, garlic, ginger, chilli flakes, and sesame oil and add a little salt to it. Give it a whisk to combine and drizzle over the skewers
  3. Put your skewers on the BBQ and grill for about 10 minutes until the salmon has cooked through. While cooking, add the remaining sauce on top of your skewers and try to flip only ones (the double spike of the STOV skewers should help so that your food does not fall off!). If your salmon sticks and flakes, use some oil to avoid sticking.
  4. Take the skewers off the STOV BBQ and finish up with the sesame seeds, and green onions and serve with lime wedges and a sprinkle of lime juice.

Okay, it is time to heat up that grill and enjoy those flavours!

Happy grilling from STOV!

FAQs when cooking salmon and pineapple skewers:

Can I use frozen salmon for this recipe?

Absolutely! While fresh salmon is ideal, you can use frozen salmon for convenience. Just be sure to get it to room temperature before marinating.

Can I substitute salmon with another fish?

Certainly, you can experiment with different types of fish like trout or swordfish. However, the cooking times may vary, so keep a close eye on the grill.

If I use wooden skewers how long should I soak them?

Soak wooden skewers for at least 30 minutes before using them. This prevents them from burning on the grill. If you don’t want to think about burning your skewers, check out our stainless steel skewers here.

Is it possible to make this recipe vegetarian?

Yes, you can create a vegetarian version by replacing salmon with tofu or extra-firm tofu. Marinate the tofu cubes and grill until they have a nice char.

Can I add vegetables to the skewers?

Absolutely! Bell peppers, cherry tomatoes, and red onions are excellent additions that complement the flavours.

What side dishes pair well with these skewers?

Consider serving your skewers with a fresh green salad, couscous, or grilled asparagus for a complete meal.
