Brekkie rolls are a staple of Australian life. Ranging from your most simple bacon, eggs, bread sauce combo, to the fancy new twist your local cafe conjured up for brunch.
This veggo version drops the bacon, and brings in the wonderful portobello mushroom and some goats cheese. Thanks to the STOV you can make it literally anywhere, and we can guarantee that wherever you make it (the campsite, local park or lookout at the surf beach) you'll have a lot of people stopping on their way past to try to be your new friends!
What you'll need:
- 1 large Turkish bread roll
- 2 portobello mushrooms
- 2 eggs
- 1 Avocado
- 1 Tomato
- Marinated goats cheese
- Olive oil
Method:
1. Fire up the STOV, allowing it a minute or two to heat up while you add a healthy covering of olive oil to your portobello mushrooms along with some salt and pepper.
2. Chuck the mushrooms on the grill along side some fresh organic eggs (you'll need a small pan or egg rings with a base).
3. While that's cooking, chop up your tomato and prepare the avo for spreading.
4. Cut the turkish bread rolls in half and lightly oil, before frying them on the grill.
5. Assemble your brekkie roll to your liking - we suggest Meredith's Goats Cheese, plenty of Avo and seasoning to your taste.
Enjoy with an ice cold can of cold-brew coffee!
